Bonipak's Favorite Shaved Brussels Sprouts Recipe

Prep Time: 15-20 minutes
Cook Time: 5 minutes

Ingredients:

  • 1 lb Brussels sprouts, trimmed 

  • ⅓ cup Caesar dressing  

  • ⅓ cup shaved Parmesan cheese 

  • Juice of ½ lemon 

  • ½ cup croutons (optional, for crunch) 

  • Fresh cracked black pepper   

Optional Add-Ons: 

  • Crispy bacon bits

  • Grilled chicken

  • Toasted almonds or breadcrumbs

Directions:

  1. Prep an ice bath 

    Fill a bowl with ice and water. Set aside.  

  2. Blanch the Brussels sprouts 

    Bring a pot of salted water to a boil. Add whole Brussels sprouts and cook for 2–3 minutes until bright green and slightly tender.  

  3. Shock + dry 

    Transfer immediately to the ice bath to stop cooking. Drain well and pat completely dry.  

  4. Shave the Brussels sprouts 

    Thinly slice using a knife, mandolin, or food processor until finely shredded.  

  5. Build the salad 

    Toss shaved Brussels sprouts with Caesar dressing and lemon juice until evenly coated.  

  6. Add texture 

    Fold in Parmesan and croutons (if using).  

  7. Finish 

    Top with fresh cracked black pepper and extra Parmesan. Serve immediately or let sit for 5–10 minutes for even better flavor.
