Charred Cabbage & Cilantro Lime Slaw

Serves: 3–4 
Prep Time: 10 minutes 
Cook Time: 10–12 minutes 

Ingredients:

  • 1 head Bonipak green or purple cabbage, cut into wedges  
  • Shaved Carrots 
  • 2 tbsp olive oil  
  • Salt + black pepper  
  • Juice of 2 limes  
  • ¼ cup chopped fresh cilantro  
  • 2 tbsp honey or agave  
  • 1 clove garlic, minced  

Optional add-ons: 

  • Sliced jalapeño  
  • Crumbled cotija cheese  
  • Toasted pepitas  

Directions:

  1. Char the cabbage
    Heat a large skillet or grill pan over medium-high heat. Brush cabbage wedges with olive oil, season with salt and pepper, and cook 3–4 minutes per side until edges are charred and slightly softened.
  2. Make the dressing
    In a small bowl, whisk lime juice, honey (or agave), garlic, and a pinch of salt.
  3. Toss it up
    Roughly chop the charred cabbage andtransfer to a bowl. Toss with dressing and fresh cilantro. 
  4. Finish
    Top with jalapeño, cotija, or pepitas ifusing. Serve warm or slightly cooled.
