Broccoli Apple Slaw

Ingredients:

  • 3 cups Bonipak broccoli slaw (or shredded broccoli stems and florets) 
  • 1 apple, thinly sliced (Honeycrisp or Fuji work well) 
  • ½ cup Bonipak cabbage sliced (green or red) 
  • ¼ cup dried cranberries 
  • ¼ cup toasted pecans or walnuts 
  • 2 green onions, thinly sliced 
  • ¼ cup crumbled feta or goat cheese (optional) 
  • 3 tbsp olive oil 
  • 1 tbsp apple cider vinegar 
  • 1 tbsp Dijon mustard 
  • 1 tbsp pure maple syrup 
  • Salt and pepper to taste 

Directions:

  1. In a large bowl, combine broccoli slaw, apple slices, sliced cabbage, cranberries, nuts, and green onions. 
  2. In a small jar or bowl, whisk together olive oil, apple cider vinegar, Dijon, maple syrup, salt, and pepper. 
  3. Drizzle dressing over the slaw and toss gently to coat. 
  4. Sprinkle with cheese before serving, if desired
