Ingredients:
- 1 head Bonipak green or purple cabbage, cut into wedges
- Shaved Carrots
- 2 tbsp olive oil
- Salt + black pepper
- Juice of 2 limes
- ¼ cup chopped fresh cilantro
- 2 tbsp honey or agave
- 1 clove garlic, minced
Optional add-ons:
- Sliced jalapeño
- Crumbled cotija cheese
- Toasted pepitas
Directions:
- Char the cabbage
Heat a large skillet or grill pan over medium-high heat. Brush cabbage wedges with olive oil, season with salt and pepper, and cook 3–4 minutes per side until edges are charred and slightly softened. - Make the dressing
In a small bowl, whisk lime juice, honey (or agave), garlic, and a pinch of salt. - Toss it up
Roughly chop the charred cabbage andtransfer to a bowl. Toss with dressing and fresh cilantro. - Finish
Top with jalapeño, cotija, or pepitas ifusing. Serve warm or slightly cooled.
