Bonipak Crunch Bowl

Ingredients

  • 1 bag Bonipak broccoli florets
  • 1 bag Bonipak cauliflower florets
  • 1 cup cooked quinoa
  • 1 cup shredded carrots
  • 1 avocado, sliced
  • 1/3 cup roasted pumpkin seeds
  • 1/4 cup crumbled feta cheese
  • 2 tbsp olive oil
  • Salt and pepper to taste

Lemon Tahini Dressing

  • 1/4 cup tahini
  • 2 tbsp lemon juice
  • 1 tbsp olive oil
  • 1 tsp honey
  • 2–3 tbsp warm water
  • Salt to taste

Instructions 

  1. Preheat oven to 425°F.
  2. Spread broccoli and cauliflower florets onto a sheet pan. Drizzle with olive oil and season with salt and pepper.
  3. Roast for 20–25 minutes until edges are golden and crisp.
  4. While vegetables roast, whisk together all dressing ingredients until smooth. Add warm water as needed to thin.
  5. Assemble bowls with quinoa, roasted vegetables, shredded carrots, avocado, pumpkin seeds, and feta.
  6. Drizzle with lemon tahini dressing and serve immediately.
