Bursting with flavor!
- 1 1/2 pounds fresh spinach
- 6 slices cooked bacon (reserve drippings)
- 1/3 cup onion, chopped
- 3 hard cooked eggs, peeled and diced
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 2 tablespoons olive oil
- 1 tablespoon red wine vinegar
- 1 tablespoon chicken stock
- 1/8 teaspoon curry powder
Rinse spinach and remove stems. In salad bowl, crumble
bacon over spinach. Top with chopped eggs and onion
season with salt and pepper. Heat bacon drippings with oil,
vinegar, chicken broth and curry powder.
Pour over salad and toss.

- 10 oz. fresh spinach
- 2 cups mushrooms, stemmed and sliced
- 2 cups cherry tomatoes, halved
- 1/2 cup blue cheese salad dressing
- 1/4 cup walnut pieces
In salad bowl, toss ingredients and pour over dressing.
