Light and fast.Ê Great with Fiesta Fried Rice!
  • 1 1/2 cups sno peas
  • 3 tablespoons salad oil
  • 1 clove garlic, minced or pressed
  • 1 pound medium-size shrimp, shelled and de-veined
  • 8 oz sliced water chestnuts, drained
  • 3 green onions (including tops) sliced thinly
Cooking Sauce:

Mix 1/4 teaspoon ground ginger and 1 Teaspoon Cornstarch. Add in 2 tablespoons each soy sauce and dry sherry and 1/2 cup chicken broth.Ê Whip vigorously until well mixed.

Place wok over high heat and add oil.Ê To hot oil, add garlic and shrimp.Ê Stir fry for about one minute.Ê Add peas and cook for 3 minutes. Mix in water chestnuts and onions.Ê Pour in cooking sauce (stir sauce well first) and cook until sauce boils and shrimp turn pink.

  • 1/2 pound snow peas, trimmed, strings removed
  • 1/2 pound fresh mushrooms, stems trimmed
  • 1 large red bell pepper, cored and seeded
  • 6 Tbsp. bottled vinaigrette or "lite" Italian dressing
Blanch snow peas in boiling water for 1 minute or until they turn bright green. Drain and plunge into ice water. Drain well on paper towels and pat dry. Cut pods in half and place in salad bowl. Set aside to cool. Thinly slice mushrooms; add to snow peas. Cut red pepper into thin strips; add to salad bowl. Toss vegetables with dressing.
