Spicy and lively!
  • 1 head of cauliflower
  • 1 cup non-fat plain yogurt
  • 2 Tbsp. prepared chutney 1-1/2
  • 1 Tsp.curry powder
Divide cauliflower into equal florets. Place florets in a steamer basket or colander in a large saucepan with 1 inch of water. Cover and bring to a boil. Steam for 7 to 9 minutes. Mix together yogurt, chutney and curry powder. Spoon sauce over steamed cauliflower. Serves 5.

Quick, low fat, and tasty!
  • 1-1/2 cups Cauliflower flowerets
  • 1-1/2 cups Broccoli flowerets
  • 1/4 cup minced onions
  • 1 cup mushrooms cut lengthwise
  • 1-1/2 cups water
  • 2 teaspoons sugar
  • 2 teaspoons cornstarch
  • 1 tablespoon water
  • cooking spray or vegetable oil
Spray large skillet with cooking oil (or in 1 teaspoon cooking oil) and sauté mushrooms and onions.Ê Add 1 cup water and bring to a boil.Ê Add cauliflower and cook, covered, for 5 minutes, stirring frequently. Ê Now add broccoli and cook, again covered, for 10 more minutes, still stirring often. In small bowl, mix 1/2 cup water, sugar, and cornstarch.Ê Add to vegetable mixture and cook until sauce thickens.Ê Makes 4 servings.
