The original Santa Maria Barbecue has its roots in the early 1800's, when local rancheros gathered each spring to help each other brand calves. A Spanish style barbecue would be prepared by the host as thanks to his vaqueros (America's first cowboys), family and friends. A sumptuous feast that included beef barbecued over a red oak fire, served with Poquito beans, bread, salsa and homemade desserts became a popular event.

Today the Santa Maria Style Barbecue is a tradition that lives on in both the ranching community and the neighborhoods of the Central Coast. The people of the Santa Maria Valley have kept the tradition alive by making this type of barbecue the center of all major events.

Simplicity is the key to the Santa Maria style barbecue. Thick cuts of beef seasoned only with salt, pepper and a hint of garlic are cooked over Santa Maria Valley red oak coals. Many say that this is the secret to the distinctive flavor. The original cuts of meat were three inches thick and weighed 3-4 pounds. Today, a smaller cut known as tri-tip is more popular.
